Ingredients:
biscuit crumbs 250g
brown sugar 50g
Butter, melted 120g
Eggs 3
Sugar 125g
Cream cheese 675g
Salt 1/8 tsp
Vanilla essence 1/2 tsp
Lemon zest 2 tsp
Sulatanas/Raisins 50g
Procedure:
1. Preheat oven to 160 °C. Mux crumbs, brown sugar and butter together.
2. Pressed mixture into the base and sides of a greased springform tin.

3. Chill in refrigerator.
4. Beat eggs and sugar until light.
5. Beat cream cheese with salt and vanilla until soft.
6. Gradually beat the egg mixture into cheese mixture.
7. Stir in the lemon zest and sultanas.
8. Pour into chilled crumb base. Bake for 50 to 60 minutes. Or until a skewer comes out clean.
9. Cool and completely chill before serving.
